Creativity Amidst Pandemic - Dragon Fruit Bánh Mì

At the start of the outbreak in Vietnam, farmers were struggling to sell dragon fruit as well as other produces because borders with China were closed down. This affected farmers financially, as they faced difficulty in supporting themselves and their families, and emotionally, seeing their hard-work went to waste.



Seeing the hardship, the owner of ABC Bakery, Kao Sieu Luc a.k.a "the Bread King of Vietnam", was struck with the idea of using unsold dragon fruit to make baguette in order to support the farmers.

By mixing the dragon fruit pulp into the baguette dough, Luc successfully created a tasty, nutritious, and aesthetic treat that was able to ease farmers' worries and contribute to local economy.

His invention received a great deal of praise from people all over the nation as well as those from foreign countries. This shows a beautiful example of one's creativity and kindness. Dragon fruit bread, or the rescue bread, was highly supported and became an instant hit, it also created a new trend for everyone to follow.

MAKE YOUR OWN  


Ingredients:

  • Dragon fruit pulp: 210g

  • Yeast: 4g

  • Flour: 300g Butter: 10g

  • Whole milk: 20g

  • Sugar (optional): 10g


Step 1: Mix all ingredients in mixer or knead by hand around 20 mins until the all ingredients are well mixed and the dough becomes non-sticky.


Step 2: Portion the dough into small (or your preferred size) round buns.


Step 3: Wrap the dough and let it rest for an hour.


Step 4: Lightly slash the top of the breads 3 times diagonally and spray a bit of water on the bread's surface before baking in the oven for 3-5 minutes at 230 degree Celsius.


Step 5: Take the loaves out, spray a bit more water on the surface, and bake for another 10 minutes
